Bella Braised Chicken:

1 tbsp unsalted margarine

2 medium onions chopped

2 stalks celery diced

1 carrot diced

2 cloves garlic minced

3 tbsp flour

¼ tsp ground pepper

Six 4oz boneless skinless chicken breasts

1 tbsp olive oil

One 14.5 oz can diced tomatoes

1 cup low sodium chicken broth

½ cup dry white wine

2 tbsp minced parsley

1 tsp dried thyme


Preheat oven to 325 degrees

In non-stick skillet melt margarine. Add onions, garlic, celery and carrot. Cook until softened. Transfer to casserole dish. Dredge chicken in pepper-seasoned flour, sauté in olive oil until brown. Arrange on top of vegetables in casserole dish. In same skillet cook tomatoes, broth, wine and parsley until boiling. Add to casserole and bake uncovered until chicken is cooked (about 1 hour). Yields 6 servings.

Beef Patties with Mushroom Sauce:

8 oz fresh slice mushrooms

1 lb extra lean ground beef. (Shape into 4oz patties)

½ cup dry red wine

41/2 g powdered beef bullion

½ tsp oregano leaves

¼ tsp black pepper

Sauté mushrooms about 5 minutes, set aside. In same skillet cook patties to 160 degrees.

Put on a plate and keep warm. In same skillet, mix remaining ingredients and mushrooms, bring to a boil, reduce for about 1 minute. Pour over beef patties and serve.

Yields 4 servings

Applesauce Breakfast Cake:

½ cup Margarine

1/3 cup Splenda

1 egg

11/2 cup Soy flour

1 cup uncooked Oatmeal

21/2 tsp baking powder

1 tsp ground cinnamon

1 cup unsweetened applesauce

1/3cup water

½ cup chopped walnuts

Heat oven to 350 degrees. Lightly spray 9” baking dish w/ cooking spray. Combine flour, oats, baking powder and cinnamon. Blend and set aside. Beat together margarine and Splenda, add flour mixture, applesauce and water. Fold in walnuts and spread evenly in prepared baking dish. Bake 40 t0 45 minutes until golden brown. Yields 12 cuts.

Hamburger Soup:

1lb extra lean ground beef

1 medium onion chopped

1tsp-minced garlic

15oz Tomato sauce

14.5 oz can diced tomatoes (unsalted)

4 cups water

1tbsp Worcestershire sauce

1 bay leaf

1 cup sliced carrots

11oz whole kernel corn

1/3 cup brown rice

Cook beef, onion and garlic until meat is thoroughly cooked. Drain liquid. Add tomato sauce, tomatoes, water, Worcestershire sauce, bay leaf and carrots. Bring to a boil, lower heat and simmer for 10 minutes. Add corn and rice and cook until rice is finished (about 30 minutes). Water can be added if consistency is too thick.

Yields 8 servings.

Sloppy Joes:

1lb extra lean ground beef or ground turkey

¼ cup tomato juice

2 tbsp minced onion

1 tbsp Dijon mustard

¼ tsp Dry mustard

2 tbsp ketchup

Brown meat and onions in pan drain liquid. Add remaining ingredients. Mix and simmer 20 to 30 minutes.
Yields 4 servings.

Meatloaf:

1lb lean ground beef

11/4cup low sodium Salsa

¾ cup quick cooking oatmeal

1 shredded carrot

2 plumb tomatoes, diced

1/2cup chopped mushrooms.

Preheat oven to 350 degrees. Spray a loaf pan w/ cooking spray. Combine all ingredients and shape to fit and place into loaf pan. Bake to 160 degrees. Yields 4 servings.
